|3/4 cup olive oil||1 small red onion, grated|
|1/2 cup red wine vinegar||1 - 4oz jar pimento, chopped|
|2 clove garlic, minced||---|
Mix the dressing ingredients together and refrigerate several hours before using.
|1 medium head of lettuce||1 jar of artichoke hearts|
|1 medium head of Romaine lettuce||1 large red onion, sliced thin|
|1 can hearts of palm, sliced||3/4 cup grated Parmesan cheese|
Several hours before serving, sprinkle cheese over torn lettuce and all other ingredients, then toss in the dressing.
Chill several hours before serving.
